The world-famous smoke house that is celebrated here. Situated at the end of Henrietta Street, this is sadly one of only a handful of traditional smokeries left in Britain.
The smokery stands next to the shop and here, prepared, soaked in brine then hung over a smouldering fire of oak chippings to be slowly smoked in the time-honoured way!
